Grade 8000 is the highest grade available. A sharp knife is a safe knife because it wont slip, and food stays fresher longer with more colour for longer as a cut with a very sharp blade does not oxidize as quickly and won't brown nearly as fast. Fresher faster, cleaner looking veges.
