Dim sums made with wheat-starch dough balls pressed flat with this and when steamed look a little translucent? The dumplings at Dim Sum with the coriander leaf or sometimes shrimp are not the northern style wheat dumplings normally found at the moment.
For Tortillas use Masa flour. Masa Lista is the brand we stock now.
I felt that the dumplings we enjoy everywhere now, were crude the first time I tried them decades ago in China. But specifically the dim sums are Gow Jee in Cantonese, and you can also make Har Kao and Gao Choy Gow too. No need for Mandarin as these are all Cantonese.

Well actually where did tomatoes, chocolate, potatoes, kumara, chillies ( capsicums?) quinoa , chia etc come from?
Made in NZ, made in Mt Maunganui. Better than trade aid. We have paid a good price to get these made for our shop. Much money went to a small town. Help mini artisan manufacturing . Overseas ones are made in big quantities so of course will be cheaper. These are heavy duty too. Hardly anyone anywhere supports local industry, please help us. Enjoy your tacos!
They are 15cm diameter. Some others I have seen are too wide.
