Some clever words based on someone's experience with Mirin as a flavour.... because of its grain-based origins as opposed to fruit-based, mirin will actually provide an umami flavour where wine will not. A lot of Asian foods have a tangy, subtle-sweet, umami combo of flavours going on, and a big part of that is mirin.
